This year will be our third year of growth for our initial acreage up in Fort Fairfield. For us this means our first full commercial harvest. Without decades of harvests recorded for our area, we are being forced to very closely monitor cone maturity and dry matter over the next several weeks. Our goal is to capture the cones at their aromatic peak which we anticipate to be 3-5 days after their more traditional metric of peak alpha acids. This year will certainly be an important year for us as we will be taking measurements even after our primary harvest to allow for a better understand for next years crop. Because we will be establishing a committed harvest date with our brewers several weeks before the bines come down, we are using all the information we have to best forecast maturity but nothing will be as valuable as experience.
